Fresh fish soup is a famous characteristic snack that enjoys a long history in Wuhan. It can be dated back to the Zhong’s Fresh Fish Soup in 1932.
The soup is made by stewing small wild crucian carps in water. In natural environment, the meat of wild crucian carps is very fresh and delicious. Peddlers engaged in fresh fish soup normally buy small live crucian carps in the afternoon and stew the fish for whole night. Both fish meat and bones merge in soup.
Usually Wuhan residents eat fresh fish soup for breakfast, and they often eat it together with fried bread stick, deep-fried dough cake, shao-mai, etc.
